One form of Ajil is these nuts in-shell that guests will eat and, with decades of practice, shell with their mouths, without the aid of their hands at all- no kidding- just emitting from their lips the empty shells. Several nuts at a time! The seeds can be sunflower seeds and many others types, mixed in with pistachios and dry chick peas.

Tavazo means scale- and this store is probably the most famous nut and dried goods store in Tehran. Dried nuts are incredibly important in Iranian culture. When someone comes over, you provide hot tea, and you provide either a salty or sweet mixture of nuts, including dried figs, almonds, walnuts, pistachioes and many other ingredients. The sweet version also has raisins. It is delicious.
