Kalo (Colocasia esculenta) was a staple starch of old Hawai`i, and is still grown widely throughout the islands. These lo`i are similar to rice paddies. Here, water flows through the ponds, so the water does not stagnate and cause the kalo corms to rot. Poi is made from steamed kalo corms (stems, not roots). Taro cultivation reached its peak in Hawai`i, with more than 70 cultivars acclimated to many different habitats, i.e., wetland taro vs. dryland taro.
