This picture was hand-shot (with film, scanned after)and hand-stiched in Photoshop back in 2005, I think. I have made about 9 animal pictures this way-- allows the image to be printed really big, but is very difficult to shoot (especially with a manual focus) and stitch as the animal is always moving a little.
